Mo's Peanut Butter Pie

Mo's is an dining institution on the Oregon coast. We all grew up on their clam chowder, oyster stew, fish & chips and of course their peanut butter pie. This recipe is simple but damn, it reminds me of being 8 years old on the Oregon coast with a damp wind blowing in my hair. I remember the taste of salt in the air, the carnival atmosphere of the Newport boardwalk... and Mo's.

Sometimes we add a Mexican chocolate ganache that contains just a hint of hot chili pepper on top of the peanut butter - but that is a whole 'nother thing altogether.

Here are the ingredients for Mo's peanut butter pie:

3 cups milk

¾ cup granulated sugar

¼ tsp salt

¼ cup cornstarch

1 tsp vanilla

2 Tbs. butter

½ cup creamy peanut butter


Make your own pie crust from your favorite recipe or if you are in a hurry, a pre-baked.

Whipped cream (whip heavy cream with a little sugar added)

Finely chopped peanuts


Here's what you do:

Heat milk just to below the boiling point, until bubbles form around the edge.

Sift together the sugar, salt and cornstarch into a 2-quart bowl.  Then add half the heated milk and mix well.  Blend with a wire ship.

Pour that mixture back in to the remaining half of the heated milk in a pan, stirring while continuing to cook. Add vanilla and butter and continue cooking over low heat until the filling mixture thickens.

Remove from the heat and fold in the peanut butter.  Mix well.

Pour into 9 inch pastry shell. Garnish with whipped cream and peanuts.  Refrigerate until serving.
