It would be an understatement to say that the menus at Sub Rosa change to some degree every day. Sub Rosa has two distinct personalities. They're like night and day.

By day, it's a lunch room for the distillery office and stealth drop in bistro with thundering tunes, WiFi Internet connections and a limited lunch menu.

By night, when we are open, its an underground fine dining restaurant and spirits bar. We stay open late after the dinner 'rush' and spin music ranging from mash ups and Brazilian lounge to the Grateful Dead. When it is time to close up, we put on some very obscure Frank Zappa, that always clears the room.

We are methodical yet inspired cooks. Fresh ingredients, layers of flavor with a classical approach to an eclectic Pacific Northwest interpretation of world cuisine. Think global. Cook local.
