Welcome to Sub Rosa's inner lounge. You find yourself seated at a secluded bar - bathed in darkness, some ways from the dance floor. Several small booths, lit only by candlelight line the wall. Stools along the counter. Magic going on behind the bar. Chill out, dub and lounge music is broadcast via iPod.

Back to the business at hand. Champagne cocktails are simply mixed drinks with sparkling wine as a base instead of another bubbly liquid. Float a distillate on the top or stir in a fruit purée and you have a simple champagne cocktail. Get busy with a bottle of local sparkling wine and have fun with the songs below.
