Anchoïade

This is a very simple French recipe that takes two minutes to prepare. Anchoiade is a spread / dip that is excellent when served with fresh raw vegetables and a rustic bread and a well-chilled rosé wine. You'll find this served up during one of our Mediterranean or Provençal meals when we're feeling kinda French.

Here's what you need for the dip:

2 cloves of garlic

12 anchovy fillets

Balsamic vinegar (a tad)

Extra virgin olive oil (a bit more)
A mortar and pestle

Here's what you do:

In a mortar, crush two cloves of garlic, followed by a dozen anchovy fillets. Add balsamic vinegar followed by sufficient olive oil to the required consistency. Your sauce is ready.
